Change them in /etc/php.ini then reload php-fpm
Use php_ruid2 - advanced php settings doesn't work for php-fpm.I have developed a way, but in previous talks with Mustafa (posts before forum crash) my idea was dismissed.
Yes, php-fpm has much greater performance. It was not designed to use individual php.ini on a per client pool basis. You can hard code into the php-fpm.tpl if you want for just a certain client. It does support .user.ini files, however, you would have to Google that.
