How much email can sendmail handle per hour? I trying to figure out emails can I send out without jammed the server.

Try

admin — Servers — localhost — {Mail Server Settings}
decrease/increase in "Max SMTP Instances"

Hopefully Mr.Mustafa add feature "set limit email per-domain". That will be awesome!
