What need the server settings for comfortable backups?
I have configured a daily backup and every day I see high load spikes of CPU and RAM.

Move domains and database from admin to clients. And then backup for each clients with different time (let say client1 in 00.00, client2 in 01.00 and etc).

it is necessary for each domain a separate client to create?

Depend on traffic for each domains. Let say, you have 10 domains and 1 of them have high-traffic. So, better separated become 2 client which 1 for high traffic and 1 for else.

Better choose 'dynamic' for 'php-fpm type' in 'web features' and increase 'fastcgi children' in 'limit' (unlimited = 6; increase to 12 or high but depend on RAM capacity).
